Skiathian's Bakery - Bake (2) ...

I have been back in the kitchen ...

It had been another damp drizzly day, when in late afternoon the clouds lifted slightly. The house was cold, and the woodburner was consuming logs at a disasterous rate. I had a few hours to spare, so thought lets get the oven on.

A different type of a Mediterranean bread, this one with Olives herbs and crushed garlic. It makes an aromatic dough. Some plain rolls too ...

This time, using a different type of dried yeast, but no added Olive oil. It made a heavier bread. Twice proved, but baked on a tray traditionally rather than in the tin.

This morning for breakfast it was great toasted, with a sun dried tomato, and some oil from the jar instead of butter ...

Out on the School run this morning and we registered our interest for the childrens 'Apokres' carnival party on the 2nd March. No doubt will get a call from Yannis, about services to be rendered on the day. Last year was excellent, even if I ended up being ill for two weeks afterwards ...

Looks like the sunshine will appear again on Saturday, something else to look forward too ...

  2. My wife does a good line in Olive bread, with or without herbs, tomatoes etc. but the only time she used garlic in the mix, it interacted with the yeast and it didn't rise. What's the secret?!

    1. This one did not rise as well, however the yeast we used is suspect. I will try another with the yeast we used, where it rose like a rocket.

  3. Cheers Ian
I can feel a scientific experiment coming on...divide basic mix by 3, one with no garlic, one with garlic in from square one, one with garlic added after first proving. Otherwise treat them all the same and voila, the answer!
